Pickled Onion Salad

Prep time: 1 hour | Servings: 4
Ingredients:
4 chopped spring onions
½ cup chopped fresh cilantro
2 tbsp brown sugar
1 tbsp lime juice
½ cup cider vinegar
2 thinly sliced red onions
4 lettuce leaves
2 tsps. olive oil
Directions:

  1. In a salad bowl combine the onions, vinegar, oil and sugar.
  2. Cover and refrigerate for 1 hr.
  3. Add cilantro and lime juice.
  4. Serve on lettuce leaves.
