Chicken Brats

1 tsp celery seed
1 tsp ground mustard seed
¼ tsp Nutmeg
1 tsp minced rosemary
½ tsp cayenne pepper / ½ tsp white pepper
1 tsp paprika / 1 tsp cumin seed
2 tsps fennel seed
1 lb. ground chicken breast
1 cup cooked brown rice
½ tsp canola oil
4 minced garlic
1 cup minced yellow onion

  1. In a frying pan, sauté the canola oil, garlic, and onion until golden
  2. Place the browned onion and garlic in the cooked rice and mix in all the
    other herbs and spices with the ground chicken breast
  3. Let the mixture marinate in the fridge for about an hour
  4. Preheat the oven to 350F
  5. Remove from the fridge and roll the mixture into sausage shapes and
    place on a cooking sheet
  6. Bake in the oven for about 5-10 mins, or until cooked.
