Cowboy Caviar Salad

• mayonnaise-¾ cup
• 8 eggs, hardboiled, peeled and mashed with а fork
• 1 yellow onion, finely chopped
• 4 oz red caviar
• toast baguette slices for serving
• 4 oz black caviar

  1. Mix in a bowl mashed eggs with mayonnaise, salt, pepper and onion and
    stir well
  2. Spread eggs salad on toasted baguette slices
  3. Add caviar at the top of the slices.
